Why do you use lots of ice in your long drinks?

By using a lot of ice you keep the drink colder for longer therefore the ice melts less so your drink remains consistent for longer. It also looks more appealing and first impression of a drinks count.

What makes the perfect bar?

A place with enough light but not too much, with cool background music that still lets you talk, where the design is pleasing but you're not expected to admire it; where brilliant drinks are made as a matter of course. A place that has different moods that match your own, that feels right full or empty, where you will be accepted for yourself and treated however you want to be.

What makes a great bartender?

Bartending is theatre and a great bartender is the heart and soul of any bar. An excellent understanding of drinks and drinks making are a pre-requisite but there is also a need to understand what makes coming to any bar a great experience for the customer.

What's the origin of the cocktail?

Cocktails were not very well known until the early 1800's. The first know printed term appeared in 1803 in a publication called the "Farmers Cabinet", but it was not defined in print until May 13th 1806 in a satirical article in an American Publication called "The Balance and Columbian Repository", Hudson, New York:

"Cocktail then is a stimulating liquor, composed of sprits of any kind, sugar, water and bitters it is vulgarly called a battered sling, and is supposed to be an excellent electioneering potion inasmuch as it renders the heart stout and bold, at the same time that it fuddles the head. It is said also, to be of a great use to a democratic candidate: because, a person having swallowed a glass of it, is ready to swallow anything else."

What are the safe levels of consumption?

Men - 21 units per week
Women - 14 units per week

It is important that units are not "saved" up, as the acute effects of drinking excessively on one occasion ("binge drinking") mean that these recommended amounts are intended to be spread across the week.

Does it not take too long to make cocktails in a bar?

If the right planning and preparation are undertaken then make good long drinks or cocktails should not take too long. By knowing the drinks and keeping the list appropriate to outlet quality cocktails and long drinks can be achieved.
