This is a release of aromatic oils from a strip of citrus zest. Usinf a knife or peeler, cut a 12cm wide and 60cm long length of zest from an unwaxed, cleaned fruit. Holding the strip, twist one end clockwise and the other anti-clockwise to release its oil. Finally drop the zest into the cocktail.

'Dusting' a drink is sprinkling chocolate powder or nutmeg over the top.

When using salt (ideally sea salt), moisten the rim with a wedge of lime and dip into a saucer of salt. For sugar, chocolate or desiccated coconut use an orange instead of a lime.

The term 'ignite', 'flame' or 'flambe' indicates that the drink should be set alight. Before drinking, the glass should be covered to extinguish the flame.
